Which water for specialty coffee? The variable nobody tests
We fuss over everything except the essential. We weigh the coffee to the gram, nudge the grind a notch, watch the temperature to the degree — then pour over it water we've never tasted. It's the most common blind spot in home coffee, and yet a cup of filter coffee is over 98 % water. That water isn't a neutral carrier: it's the solvent that pulls the aromas out of the grounds. Depending on what it already contains, it will do that well, badly, or halfway. Understanding your water unlocks the last ceiling on your cup — often without changing anything else.

What water actually does to extraction
To get it, you have to accept something counterintuitive: perfectly pure water is not good coffee water. The dissolved minerals — mainly calcium and magnesium — act as aroma magnets: they grab the coffee's compounds and help the water extract them. Distilled water, with no minerals at all, gives a hollow, flat coffee, because it has nothing to 'catch' the flavour with. At the other extreme, very hard water, loaded with limescale, is already half saturated: it struggles to dissolve more, extraction is held back, the coffee tastes dull. A third player matters, often ignored: the bicarbonates, which buffer acidity. In excess, they erase the bright, lively acidity that gives specialty coffees their charm, and the cup turns flat, almost chalky. Finally, chlorine and tap-water compounds add off-odours that mask the finer aromas. Four problems — too few minerals, too much limescale, too many bicarbonates, chlorine — and, happily, four simple fixes.
The range to aim for (and the real secret everyone misses)
If you keep just one number, here it is: successful coffee water sits around 50 to 175 ppm of total mineral content — the famous TDS, for total dissolved solids — with moderate hardness. That's the range recommended by the Specialty Coffee Association, and it works remarkably well for most coffees. But here's what guides often forget to say, and it changes everything: two waters with the same TDS can give two radically different cups. What matters isn't just the total amount of minerals, but their nature and balance — the proportion of calcium, magnesium and bicarbonates. Magnesium tends to bring out bright, fruity aromas; calcium adds body and roundness; bicarbonates must stay low so they don't crush acidity. That's why a 'spring water' praised for its purity can disappoint, while a modest, well-balanced water works wonders. The total figure is a starting point, never a guarantee.
Diagnose your water in ten minutes, with no gear
Before buying anything, start with a free diagnosis. First reflex: taste your tap water on its own, at room temperature. A taste of chlorine, earth or metal will show up in your coffee — that's already a signal. Second clue, right in front of you: look inside your kettle. A white, chalky deposit — limescale — betrays hard water, loaded with calcium carbonate, which holds back extraction and furs up your gear. Third source, the most precise yet free: your tap water has a known composition. In most countries the water-quality report for your area is public — often on the local authority's or water utility's website — and lists hardness. For bottled water, it's all on the label: look for the 'dry residue at 180 °C', in mg/L, which is in practice its total mineral content. Finally, if you want an instant number, a small electronic TDS meter costs a few euros and gives it to you in a second. None of these steps is essential, but together they tell you where you stand before spending a cent.

Which water to choose: the decision tree

First path, if your tap water is low to moderately hard with no strong taste: a simple activated-charcoal filter jug is often enough. It removes chlorine and some limescale, for a trivial cost — the best starting point for the vast majority. Second path, if your water is very hard or unpleasant to taste, and you don't want to overthink it: switch to a lightly mineralised bottled water. It's the most reliable route to an immediate result, at the cost of a budget and plastic waste to accept. Third path, for the curious who want full control: start from near-pure water — reverse osmosis or demineralised — and remineralise it yourself to an exact dose. That's the route of enthusiasts and competition baristas: the most precise, the most reproducible, but also the most technical. There's no single right choice — the right one is the one you'll stick with over time, depending on your starting water, your budget and your appetite for tinkering.
Bottled waters: which work, which to avoid
Not all bottled waters are equal for coffee, and price has nothing to do with cup quality. The rule is simple: look for soft, lightly mineralised water. On the label, the 'dry residue' gives you the answer in one figure. Among the safe, easy-to-find options: very low-mineral waters (dry residue around 20-30 mg/L, such as Mont Roucous in France) are long-time favourites of filter-coffee lovers for their neutrality; a water around 130 mg/L, like Volvic, offers a balanced, versatile compromise. Conversely, beware of heavily mineralised waters sold for their 'health' benefits: extremely hard waters like Contrex or Hépar (well over 1,000 mg/L of residue) may be good for the body but catastrophic for coffee — they saturate and scale. Even a famous water like Evian (about 345 mg/L) is already too hard to let a delicate coffee speak. The habit to build: turn the bottle over, read the dry residue, aim low. A discreet, cheap water will almost always beat a prestigious, heavy one.
Remineralising yourself: who is it really for?
Remineralising means starting from blank water — reverse-osmosis or demineralised, with no minerals at all — then adding exactly the minerals you want. The benefit is twofold: you get optimal water and, above all, identical water every time, wherever you live. Two approaches exist. The simplest: ready-made sachets to drop into a set volume of water, sold by specialist brands — nothing to weigh, almost foolproof. The most economical and geeky: making your own concentrated salt solutions (typically magnesium sulphate and bicarbonate) from recipes freely shared by the coffee community, including the one popularised by James Hoffmann. Let's be honest: for most people, this is a refinement, not a necessity. If your filtered tap water already makes good coffee, remineralising won't change your life. But if you live in a very hard-water area, if you want a perfectly stable base to compare coffees, or if the lab side amuses you, it's a fascinating door — and the last serious adjustment left for you to explore.

The second concerns classic domestic softeners: they swap calcium for sodium, which protects your plumbing but gives a slightly salty, flat-tasting cup — salt-softened water is not good coffee water. The third, already seen, is choosing bottled water by its 'healthy' reputation rather than its dry residue: the most mineralised waters are the worst for coffee. A fourth, subtle one: reboiling the same water ten times, which concentrates the minerals and shifts the taste — prefer fresh water each time. The last, the most common of all: never thinking about it. Ignoring your water means leaving to chance the variable that makes up 98 % of the cup.

You don't need to change everything at once. The minimal move, tonight, fits in one sentence: brew your usual coffee with a different water — a filter jug if you're on tap, or a bottle of lightly mineralised water — and taste it side by side with your old water. And as with grind or temperature, progress comes from memory: note which water you used, and what it changed — more fruit, less bitterness, a cleaner finish.
